Vegetable Summer Rolls

As I mentioned in a previous post, I volunteered to bring a side dish to a work cookout.  The cookout always features the usual Americana cookout fare: burgers and dogs but since the employees bring in side dishes it does get some variety.

So I was wracking my brain trying to sneak in something healthy and a little bit different, but not so different that it would throw everyone off.  I also needed to choose something that didn’t need to be cooked.  Summer Rolls!  Perfect.

A majority of summer rolls feature shrimp, but sometimes other proteins are subbed in like tofu, chicken, pork, etc.  I wanted to stick to only vegetables because I wasn’t sure of any food allergies/preferences (you know how it is, one person won’t eat shrimp, another won’t eat beef, etc.) and I figured the majority of vegetables would be safe…and cheap (back to me being on a budget).  Plus I wanted it to be on the lighter side to contrast with all of the other heavier side dishes.  Then I covered myself a bit more since I was worried that people wouldn’t eat them since it was something a lot of your traditional Midwesterners  have never tried before so I made deviled eggs (but that’s another post).

I’m always trying to eat a variety of fruits and vegetables so I ended up picking vegetables that were colorful and contrasting.  Feel free to add, subtract, or change any of the vegetables listed.

Tofu Triangles with Spicy Onion Sauce

The place I’m interning at has a cookout every other Friday for lunch and employees volunteer to cook, set up, bring sides, etc.  I had wanted to bring a side two Fridays ago but I was broke.  Like ridiculously, I haven’t had a paycheck/made any money for the last three and a half weeks broke.  So I volunteered for this week but was still trying to keep a low budget

I had meant to start dinner in the slow cooker Thursday before work, that way when I got home all I had to do was focus on the work sides (deviled eggs and summer rolls) but um, well I kind of woke up Thursday morning and I swear my eyes were stuck together.  I stumbled my way into the kitchen and chugged down my morning milk with a Carnation Instant Breakfast, and spoonful of iced hazelnut coffee (and I was amazed that I even managed to pull that off).  And then I just felt lazy.  I had the time to put it all together but it just seemed like so much effort, you know?

So yeah, no dinner in the slow cooker before I left which just meant more work when I got home.  While running through my weekly meal plan I was aiming for the quickest recipe I still hadn’t cooked which ended up being Tofu Triangles with Spicy Onion Sauce from Cooking Light – full original recipe text here.

The New Dancing Wasabi

Last night we were walking around Hyde Park Square around 9 pm and I was being extremely indecisive (much to the annoyance of the husband) about what I wanted for dinner.  I was looking at Poco a Poco or Teller’s but finally decided to just grab sushi.  So we walked over to Beluga only to discover that…Beluga is no longer Beluga but has become the second Dancing Wasabi!  Click on the logo to go to their website.

Dinner Interrupted so a Review of My Fitness Pal

So I was struck yesterday with this great idea for doing an awesome burger. After I got off work I went running to the grocery store to get the ingredients and rushed home to put it into action.

Long story short – it completely failed (luckily we still had some leftovers from the other day and ate that for dinner instead).  I’m not giving up on it yet though.  Whenever I’m making up a recipe or have an idea, if it doesn’t work the first time I always give it a second shot.  After that, it really depends on whether I think it has a chance of being good that decides whether or not I give it a third try.

So since I don’t have a recipe to post, I thought I’d address MyFitnessPal, a free app for both Iphone and Android.  You can also access it online at www.myfitnesspal.com.
